Packed full of tomatoes, peppers, onion, garlic, delicious spices, antioxidants & vitamins.
What you will need for 4 people:
1 tbsp olive oil
1 onion finely sliced
2 cloves of garlic finely chopped
1 red chilli, finely chopped , i like to leave the seeds on , but up to you to leave them or not
1 tsp of smoked paprika
1 tsp of ground cinnamon
4 to 6 fresh tomatoes or a can of chopped tomatoes
1 red pepper finely chopped
4 eggs
1 avocado(optional)
2 tbsp of coriander leaves
50g of yogurt
4 slices of nuce sourdough bread
Salt and pepper to season if needed
Heat the olive oil in a large casserole or large shallow frying pan , fry the onion and add all the other ingredients to the pan and let it cook for about 15/20min in a low eat till the pepper and
tomatoes are fully cooked and created a delicious and very rich tomato sauce.
Make 4 hollows in the tomato sayce and crack the eggs into each. Cover and let the eggs cook until the egg white have just set.
Sprinkle with slices of avocado, coriander and dollops of yogurt.
Serve on top of the sourdough bread and enjoy .
